Grilled cheese with spinach and bacon

From Giada De Laurentiis

4-6 slices cooked bacon
3 tbs butter
4 oz shredded cheddar
4 oz shredded jack cheese
1/2 tsp kosher salt
1/2 tbs olive oil or more as needed
1 c. coarsely chopped, packed spinach leaves
sturdy white bread (more on this later, we're experimenting and perfecting our bread recipe)

Using a food processor blend the butter, cheeses, salt and oil until well blended.
Add in the spinach and pulse until combined.
you're looking for a bring green paste consistency, add more oil if you need it.
Spread the cheese and spinach mixture on all the pieces of bread and top half of them with bacon.
Spread the outsides with butter and grill both sides.

The original recipe called for double the amount and the first time we didn't halve it. We froze the rest of the filling and it defrosted fine when we went to use it again later.
