Crockpot Beef Stew

I've updated this recipe to make more stew.  My kids are hungry, all the time.  Use as many vegetables as you'd like.  At the time of the edit, I didn't have much celery so I only used 2 small stalks.  It was fine.  If you've got quick cook barley, throw in some cooked grains in at the end.  

3 lbs stew beef
3 large potatoes 3/4 inch dice
4 large carrots 3/4 inch dice
4 stalks celery 3/4 inch pieces
1 large onion 1/2 inch pieces
1/2 c. soy sauce
1/3 + c. flour
1 1/2 tsp paprika (does anyone else PAP-rick-ah in their head when they read it? Ok, just me then)
1 1/2 tsp salt (omit if using regular soy sauce)
1/2 tsp black pepper
14 oz can tomato sauce
1 1/2 c. beef broth

Mix soy sauce, flour, paprika, salt and pepper in a large ziplock.
Add beef, mix well and let sit in the fridge for a few hours, overnight if possible
Layer potatoes, then carrots, the celery and then meat with marinade into the crockpot, top with onions.
In a small bowl, combine tomato sauce and beef broth and pour over top.
Cover and cook on low 8-10 hours or on high 5-6 hours.

  1. how did this go over with the kiddos? i've been thinking about beef stew for lunch sometime, but didn't want to risk them not liking it.
