Sesame Noodles

2 tbs sesame oil
3 scallions thinly sliced
1 garlic clove
1 tbs grated ginger
1 c. water
1/2 c. peanut butter
1/4 c. soy sauce
1/4 c. rice wine or white vinegar
3 tbs packed brown sugar
1/4 tsp hot chile paste like Siracha

1 lbs spaghetti broken in half (more like 3/4 lbs)
3 1/2 c. shredded carrots
1 c. matchstick cucumbers
2 green onions, sliced
sesame seeds to garnish

In a saucepan, heat oil and add scallions, garlic and ginger, cook until fragrant about 1 minute.
Stir in remaining ingredients (water through hot sauce) and bring to a simmer, stirring very often and until smooth.
Remove from heat.
Meanwhile cook pasta until al dente.
Put carrots in the colander and pour the cooked noodles overtop.
Toss pasta (enough to your liking) with cucumbers, carrots and green onions.
Add sauce and garnish with sesame seeds, top with green onions.
Extra sauce can be eaten with a spoon from the fridge stored in the fridge.

Toddler review-
Toddlers devoured this. We left out the raw green onions since two of them don't care for them.

Toddler update September 2012-
This time around, no one ate their dinners.  The smallest kiddos asked very politely not to have the sauce again.  He at all his veggies and left the noodles and sauce.  The bigger kiddos ate all their noodles and no vegs.  I think I'll be making this for myself from now on.
