Baked Beef and Bean Chimichangas
1 lbs ground beef (would be fine with turkey or chicken though too)
3/4 c. chopped onion
3/4 c. chopped green pepper
as many chopped green chiles as you want to use
1 1/2 c. corn
2 c. taco sauce
2 tsp chili powder
1 tsp garlic salt
1 tsp cumin
1 can refried beans
flour tortillas
16 oz shredded jack cheese
melted butter
In a large pot, brown beef and drain off any fat.
Add onion, pepper, corn and chiles, cook 5 mins.
Stir in taco sauce and add chili powder, garlic salt and cumin, heat through.
Spread some beans down the middle of the tortilla, top with beef mixture and top with some cheese.
Roll up, brush the tops with melted butter and bake seam side down at 350 for 30-35 mins.
For a freezer meal version, roll up chimichangas in foil.
Brush tops with melted butter and bake until done (note-not sure if I'd thaw them overnight or not. I think when we did this before it was from the freezer and into the oven-it just takes longer to bake this way).
