Layered Mexican Dip
Everyone has a version of this recipe. Here's mine.
My husband took this to a poker party where many single men inhaled the dip, piled high on their tortilla chip.
"This is really good but I don't like sour cream."
"Wow, this is excellent but I don't like avocados."
"Well, sorry to break it to ya guys. This has sour cream and avocados in it," and they kept eating it.
Warning, this makes a lot of dip. Unless it's going to a poker party. Then your husband will come home with a cleaned baking sheet as repayment for the grub.
Layer on a rimmed baking sheet in this order.
2 cans of refried beans mixed with 1 4 oz can chopped green chiles
3 avocados mashed with 2 tbs lime juice and seasoned with salt and pepper
16 oz sour cream mixed with one envelope of taco seasoning
cheese, maybe 2 cups shredded
4-5 chopped green onions
4-5 chopped roma tomatoes
Serve with tortilla chips
