Apple cake

My sister and I had the same second grade teacher. We both made this apple cake with our parents helpers during the holidays.

1 c. vegetable oil
2 c. sugar
3 c. flour
2 1/2 tsp vanilla
2 1/4 tsp baking powder
4 eggs
1/3 c. orange juice
4 medium apples. peeled and diced
2 tsp cinnamon
7 tsp sugar

Preheat oven to 350.
Mix oil through orange juice together in a large bowl.
Mix the apples, cinnamon and sugar together in another bowl.
Into a well greased bundt pan, pour 1/3 of the batter in the bottom and add 1/3 of the apples.
Repeat twice.
Bake for 1 hour and 15 minutes
