Gingered Noodle Salad

Serve with Chicken and Water Chestnut Patties
6 tbs rice vinegar
1 1/2 tbs vegetable oil
1 1/2 tsp fresh ginger
1 tsp minced japapeno
1 garlic clove, minced
8 oz noodles broken in half, spaghetti, linguine, udon etc
1 cucumber, seeded, halved and thiny sliced
1 c. sliced green onions
1 carrot, julienned
1 c. cilantro springs

Blend vinaigrette ingredients together (vinegar through garlic).
Cook noodles and drain
Toss noodles with dressing and add cucumber, scallions and carrots.
Top with cilantro.
