Chicken pasta salad with creamy curry dressing

Oh curry, how do I love thee? Let me count the ways.
Here's one of my favorite curry dishes.

1 lbs cooked spiral pasta
a whole load of poached, grilled or rotisserie chicken
4-5 chopped and seeded tomatoes
4 chopped scallions
3 tsp garlic
6 tsp ginger
2 1/2 tbs butter
1 c. 1/2 and 1/2
6 tbs white wine vinegar
1 tbs or more to taste, curry powder
dry red pepper flakes to taste
6 tbs or more mango chutney (and my second love, chutney. Ahhh)

Combine pasta with the chicken, tomato and scallions in a large bowl.
Meanwhile, melt the butter in a large skillet over medium high heat.
Cook the garlic and ginger and cook just until fragrant.
Add the half and half and cook while whisking until slightly thickened.
Whisk in vinegar, curry, red pepper flakes and chutney.
Add dressing to pasta and toss to combine.
Season with salt and pepper.
