Crockpot Salsa Chicken

This is my favorite crockpot chicken dish. Make a bunch and use it for filling in enchiladas, burritos, quesadillas and on top of nachos. It freezes well too.

3-4 chicken breasts
1 c. salsa
1 package reduced sodium taco seasoning
1/2 c. sour cream
1/2 c. (or so depending on your salsa) of water

Put chicken, salsa and water in a crockpot and cook on low 6-8 hours.
Shred chicken with two forks.
Stir in taco seasoning and sour cream and cook on low for another 10-30 minutes.

5/2022 update
We used an entire large pack or chicken thighs this time.  The chicken let off a lot more liquid so I had to take some of it out.  It was done in under 5 hours on low.  Very tasty update.
