Spenny's Favorite Chicken
Again, thank you Spenny, where ever you are. You have some very tasty chicken.
Edit-This recipe is from Better Homes and Gardens circa 1978. Don't think I'm finding that one online anywhere. Give credit where it's due though.
1 medium onion, chopped
2 tbs butter or olive oil
1 can condensed tomato soup
2/3 c. beer
dash of pepper
1 tsp curry powder (or more to your liking)
1/2 tsp oregano
dash of cayenne
1 1/2 lbs chicken breasts
parmesan cheese for topping
Cook onion in butter or oil until tender.
Stir in soup, beer, curry, oregano and peppers and simmer for 10 minutes.
Arrange chicken in an overproof baking dish and pour tomato mixture over top and top with Parmesan cheese.
Bake at 350 for 50-55 minutes.
Serve with rice or pasta.
Toddler review-
This is one of my favorite chicken dishes but i love curry. The smallest toddler ate two servings and the one older twin who was home for dinner reluctantly ate her serving too. It was a little heavy on the curry for their liking I think, just need to lighten it up for them. We will try it again.
