Salads
I wanted to devote a post to a bunch of salad ideas. You know, since the weather is getting warmer and bikini season is right around the corner. Ha, not likely but it's still time to start thinking about lightening up the menu.
I've posted a few already, Taco Salad, Tuna and Avocado, Beef and Barley with Snap Peas to name a few so make sure to check out the 'salad' tag.

Southwest Cobb Salad
Lettuce, tomato (or pico de gallo), avocado, grilled chicken, diced cooked bacon, black beans, scallions and top with queso fresco (shredded pepperjack or even feta would be good too).
We made the vinaigrette originally in the recipe but i didn't like it the way it was. We ended up mixing a bit into some reduced fat Ranch dressing and liked it much better. When I took some leftover salad the next day I added some white wine vinegar, smoked paprika, cumin, cayenne and garlic powder to bottled Ranch.
Protein Packed Salad
From Cooking for Carnivores.
Spinach, garbanzo beans, onion and cucumbers (let sit in the fridge with a bit of olive oil, vinegar, salt, pepper and red pepper flakes if you want some heat), sliced hard boiled egg. Top with your favorite vinaigrette dressing.
My MIL's favorite salad
Spinach, English cucumbers, almonds, sliced strawberries and raspberries. I think she usually uses some kind of dressing with balsamic vinegar.
Spring greens with raisins and parmesan
Springs greens, chopped cucumber, raisins, shaved carrot and shaved parmesan or sharp white cheddar cheese.
Greek salad
Lettuce, chopped kalamata olives, tomato, bell pepper, cucumber, onion (I like to soak white onion in ice water to take away a little of the bite) topped with feta. You can easily add grilled chicken or fish to add more protein.
The best Caesar Salad

It's worth it to make your own dressing for this one. Trust me.
2 cloves garlic
4 whole anchovies or anchovy paste
2 tbs dijon mustard
1 tbs balsamic vinegar
1/2 a lemon, juiced
1/2 c. olive oil
1 tsp Worcestershire sauce
salt and pepper to taste
1/4 c. parmesan cheese
Put anchovy paste, garlic, dijon, worchestershire, vinegar and lemon juice in a blender or food processor and pulse a few times, scraping down the sides if necessary.
Turn on low and drizzle in olive oil in a stream until mixture is thick.
Add in salt, pepper and parmesan cheese and pulse again a few times until everything is combined.
Cover and let sit for a few hours before serving.
There are instructions in the original link to make your own croutons if you want. I like my caesar salad with grilled chicken, cucumber and tomato.

Salad with peas and sprouts
Lettuce, shredded carrots, green peas, sprouts, sunflower seeds, cucumber
Southwest-ish grilled chicken
Romaine, grilled chicken, scallions, black beans, roasted corn, tomato, shredded cheddar and BBQ sauce mixed with Ranch as dressing. The kiddos declared this the best salad ever!
