Chiliquiles, my sister's version

She's made these so many times that it's not written down anymore and this is from my memory from the other night.

some tortillas
chicken breasts
large can of whole tomatoes
chipotles in adobo
cilantro
onion
garlic
chopped bell pepper
eggs
green onions (optional)
cotija cheese
sour cream
lime juice

Cut a bunch of tortillas into wedges and bake them at maybe 350, turning every 5 minutes until they are crisp
Cook 1-2 chicken breasts and chop or shred the chicken. You can use grilled, poached or roasted chicken
Blitz a can of tomatoes with as many chipotles in adobo as you want (with toddlers eating it, we only used one and it was fine) and some cilantro
In a large pan, cook up some chopped onion, chopped garlic and bell pepper until soft
Add the tomato mixture and toss to combine
At this point go ahead and start some fried eggs. In a large pan, melt some butter and crack one egg for each diner. When the whites just start to turn opaque, put the pan in a 375 degree oven until the yolks are to your desired doneness
Add the tortillas and cook until the are just softened
Add the chicken and warm through
To serve, put some tomato mixture on a plate and top with green onions, a fried egg, cotija and sour cream mixed with lime juice
