Scandinavian Salmon Cheddar Quiche

Leftover grilled salmon is great for this recipe.

3 eggs
1/4 c. milk
2 tbs parsley
1 tbs melted butter*
2 tbs minced green onion
1 tbs lemon juice
1 tsp Worchestershire sauce
1 tsp dry mustard
6 oz shredded cheese
6 oz cooked salmon
garlic powder, just a little bit (9/2021 update)
9 inch pie shell, baked and cooled

Beat eggs in a large bowl, add milk, parsley, butter, green onions, lemon juice, Worchestershire and mustard, mixing well.
Fold in cheese and salmon and bake in pie shell at 425 for 30 minutes or until set 
(if you have a new oven and it's super hot, take the temp down 15 degrees maybe.  The edges were done before the quiche was set)

Top quiche with cucumber sauce if desired (equal parts chopped, seeded and peeled cucumber and sour cream, season with dill, salt and pepper)

*there was some melted butter in the original and the last few times I thought it was missing something, adding in a little bit this time to see if it's that
