Spicy Thai Chile Sauce

I'll post the sauce recipe first then my favorite way to use it.
1/4 c. sugar
1/2 c. white vinegar
1/2 c. very hot water
1 lime juiced and mashed, get as much pulp out as your can
6 cloves minced garlic
1/4 c. fish sauce
1/4 c. chile paste*

*this is way too much heat for me. Start with a tablespoon or so and then taste it. Add heat for your liking.

Combine all in a jar and shake to mix well.
