Palmer Sandwiches

A variation of one of the sandwiches they have at Whole Foods.

Good dense bread, white, or sourdough is our favorite
Smear some chipotle mayo on both side of the bread if you've got it. If not, regular mayo is fine.
Top one piece of bread with cheddar, roasted turkey, roasted red pepper strips and avocado slices.
Butter the outsides of the bread and grill until everything is melted.
We use another pan with some canned items to weight it down as our make-shift panini press.
