Buffalo chili

From the Junior League of Denver's Colorado Colore cookbook
1 pound ground buffalo
1 15 oz can corn
1 15 oz can diced tomatoes
1 15 oz can rinsed and drained black beans
1 15 oz rinsed and drained red beans
1 red onion chopped
1 yellow bell pepper chopped
1 green bell pepper chopped
2 tbs chili powder
1 tbs salt or to taste
1 tbs cumin
red pepper flakes to taste
1/4 tsp black pepper
2 cloves garlic
11 oz can tomato juice
1 can beer
cilantro for garnish

Brown the buffalo and drain off any fat. Add in corn, undrained tomatoes, both beans, onion both peppers, chili powder, cumin, red pepper, black pepper and garlic. Add in tomato juice and beer and mix well. Simmer uncovered 60-65 mins. I brown the buffalo on the stove and then add all to a crockpot and cook on low for 5 hours or so.
