Tuscan Chicken Panini

8 inch round foccacia bread loaf
6 oz cooked sliced chicken
1/4 c. mayo
2 tbs pesto
3 slices provolone
1/4 c roasted pepper strips
1/4 c artichoke hearts in water


Cut the foccacia in half.
Combine the chicken and mayo. Mix well.
Spread the pesto on both sides of the bread then layer chicken, cheese, red pepper and artichokes.
Wrap in foil and bake at 350 for 15-20 minutes.
Can be made ahead, wrapped and stored in the freezer. Thaw and then bake as directed.

Toddler review 12/22/11-
I went light on the artichokes and added a little parmesan cheese. Two toddlers liked it, one not so much.
