German Hot Potato Salad

6 medium potatoes
6-8 slices bacon, diced
1/4 c. finely chopped onion
1/4 c. chopped celery
2 tsp flour
1 tsp sugar
black pepper to taste
1/3 c. white vinegar
1/2 c. broth or water

Cook potatoes in boiling, salted water until the are tender.
Remove from pot, peel and slice.
Fry bacon in a large fry pan until crisp and remove.
Cook onion and celery and cook until tender.
Combine flour, sugar, pepper, vinegar and water, mix well.
Add the bacon back in and simmer until slightly thickened stirring constantly.
Pour over the sliced potatoes and serve hot.

Toddler review 1/23/12 -
Little man had two servings, one girl ate her serving and one girl didn't finish her serving. I don't think she liked the vinegar. We'll be trying this again but not until much farther down the road.
