Corned Beef, our version
We kinda sorta made our version based onthis one from All Recipes
We changed it up though since no one liked the cabbage and I wanted more carrots and some onion in there too.
3 pounds corned beef brisket with spice packet
10 small red potatoes
5 carrots, peeled and cut into 3-inch pieces
2 medium onions cut into quarters
Layer a few vegetables on the bottom and then top with the brisket, all in the remaining vegetables and seasoning packet
Add enough water to come up just less than half of the meat mixture
Cook on low for 8 hours.
Slice the meat across the grain and serve with the vegetables.

We might want to put in the carrots about halfway through. We like our vegetables firmer rather than soft.
Toddlers liked the meat and carrots. I couldn't freeze the leftover fast enough. we used the corned beef again in Reuben sandwiches.
