Zucchini fries

I can't believe I don't have this written up yet.  Zucchini fries, about the only way I can get the carnevore kid to eat zucchini. 

Please make as much as you can eat, they do not reheat well.

From Budget Bytes

2-3 small zucchini
1/4 cup flour
1/8 tsp salt
1 cup Panko
1/2 cup parmesan cheese
Italian spices to your liking
1 large egg, beaten

Cut your zucchini into long sticks
Add the flour and salt in a large bag and toss to coat all the zucchini sticks
Dredge the zucchini in the egg first and then the breadcrumb mixture
Place zucchini on a wire rack over a sheet pan
Bake for 15 minutes at 425 or until zucchini is tender
