Garden hot sauce

This is probably my favorite hot sauce and I'm happy that we made it again.  

The basics of these hot sauces are pretty much the same, just using different spices and chiles make up a whole bunch of different flavors.  Here, the guajillo peppers aren't that spicy and lend a really nice fruity flavored spice.  

Add into your blender-
6 guajillo peppers, stems removed
and blitz a few times to make a powder

Add 3/4 cup boiling water and blitz again, let sit 5 minutes

Add in 1/4 cup finely chopped onion
2-3 cloves of garlic, also finely chopped
and 3/4 cup diced tomatoes (we used canned but you can use fresh as well, just be sure to seed and peel them)
Blitz

Add 1/2 cup apple cider vinegar
2 tsp lemon juice
1/2 tsp salt
Blitz one more time to combine

Cook in a small saucepan over medium low heat until it comes to a simmer
Cook at least 5 minutes
Then remove from heat to cool
Pour into sterilized bottles and refrigerate
