Chipotle ancho hot sauce
8 dried chipotle peppers, stems removed
Blend into a powder in your blender
Add 1 cup boiling water and pulse to combine
Let sit 5 minutes
Add 1/4 cup chopped onion
2-3 cloves of garlic, finely chopped
3/4 cup diced tomatoes
1 1/2 tsp ancho chile powder
2 tsp brown sugar
And pulse to combine
Add 1/2 cup white vinegar
1/2 tsp salt and pulse one more time
Bring to a simmer over medium low heat in a small saucepan
Cook at least 5 minutes
Then remove from heat and cool
Pour into bottles and store in the fridge
