French Dip

Mr. PB&C's friend Mike J. thought he had died and gone to heaven when I made this for him. From Rachel Ray.

2 tbs butter
1/2 c. finely chopped onion or 2-3 chopped shallots
1 1/2 tbs flour
1 shot glasdful dry sherry or dry vermouth
2 c. beef broth
1 1/2 lbs rare deli roast beef
salt and pepper
4 hoagie rolls, split and toasted

Melt butter in a large fry pan over medium heat.
Cook shallots of onion until softened.
Add flour and cook 1 min.
Add sherry and cook until smooth.
Add beef broth and whisk until blended.
Toss roast beef with salt and pepper.
Dip the roast beef into broth to warm through.
Top rolls with roast beef and serve with jus for dipping.

Toddler review 12/6/11-
Yum all around. They even wanted their own small bowls of jus. Messy, yes but everyone ate great dinners.
