Corn Chowder

4 slices chopped bacon
1 medium chopped onion
3 c. water
3 c. peeled and diced potatoes
3 tbs butter
1/4 c. flour
2 c. milk
2 c. diced ham
3 c. corn
2 tsp salt
1/4 tsp pepper
2 tbs dried parsley

Cook the bacon until crisp and remove from pan, drain on paper towels.
Add onions and cook until soft.
Add potatoes and water and cook until the potatoes are tender.
In a small saucepan, make a roux with the melted butter, flour and milk, add to the potato mixture.
Add the ham, corn, salt, pepper and parsley.
Bring just to a boil and serve.
Top with bacon

Toddler update-
Toddlers liked it. P was a little harder to convince to eat it but she did eventually. I thickened the white sauce a little too much so I had thin it out with some more milk and water. Cooking time on the potatoes was about 10 minutes at a simmer though the potatoes were about 1/2 inch dice so pretty small.

School aged kid update-
The youngest and oldest people in the house have expressed their desire to have the bacon on top.  That way it stays crispy.  That, I can do.
