Spinach with spices and butter
I don't even know what to call this. It's supposed to be served with rice but I was too tired at the end of the night. I added a little bit of orzo we had left. This is very good. Green vegetables for breakfast? Absolutely!
From Tahlia Broth Fiend
500 g (though I used less 400? maybe) spinach (fresh and frozen is what I had)
a knob of ginger, minced
One clove of garlic, sliced
Black mustard seeds
Something spicy, green chilli, or crushed red pepper
4 scallions, roughly chopped
250-300 ml chicken broth
3 tbs butter
Melt the butter in a medium saucepan and cook the mustard seeds until they start to pop
Add in the minced ginger, garlic, and chopped chilli and cook on medium heat until soft
Add in the spring onions and stir to combine
Add in the chicken broth and cook until the onions are just softened
Add in the spinach and cook just enough for everything to wilt, you want to be able to keep the bright green color
Blend with a stick blender just to break it up a little, you don't want soup
Add back to the stove to cook a little more if you want it thicker
