Fanciest sandwich in the world
Going to try this next weekend but I know it's going to piss me off the way I've saved the recipe in screenshots. Here it is written out.
For the sandwich
Sourdough baguette (I need more practice on this)
genoa salami
hot soprasetta
fontina
mixed greens
For the roasted cipolini
1 lbs pearl onions
1/4 c olive oil
1 tbs fresh thyme
1 tsp salt
fresh cracked pepper
For the spread
200 g of the roasted cipolini
100 g sundried tomatoes
3 tbs EVOO
salt to taste
For the dressing
1 c basil leaves
2 tbs balsamic vinegar
1/2 c EVOO
2 tsp oregano
1/2 lemon, juiced
salt to taste
Toss the onions with thyme and olive oil and put in an oven safe dish
Season with salt and pepper and roast at 400 for about 45 minutes or until tender and golden, making sure to turn them to get all the edges
Too a food processor add the onions, sun dried tomatoes, and oil
Pulse untila paste forms
Season with salt and pepper
In a morter and pestle or the food processor combine basil, oregano, mash or pulse until coarsely chopped
Add in the olive oil, balsamic, lemon juice, salt and pepper and pulse/mix until everything is combined
To the bottom of your toasted bread, add the sundried tomato and onion mixture
Add on the melts and top with cheese
Torch to melt the cheese
Top with the mixed greens and then some of the dressing
Smash everything together and the EAT
