Going to keep a running list here of things I've tried and liked
Ginger Unsmashed from Land's End, Homer, AK
1 oz lemon juice
1 oz mint infused simple syrup*
4 oz ginger beer
1 oz cold water
I often leave out the syrup because I don't want something super sweet.
Brazilian Limonada from NYT Cooking
4 limes scrubbed and washed, cut into wedges (save some for garnish)
1/3 c sugar
7 oz sweetened condensed milk
4 c cold water
Ice for serving
Cut off the top and bottom of the limes and discard
In a blender, combine the limes, sugar, and milk and pulse 5-8 times, you don't want it too small because then you'll get took much pith and it might be sour
Strain into a bowl, squeeze out as much as you can with the back of a spoon, discard the solids
Divide into 4 tall glasses with ice and serve with the reserved lime wedges
