Summer veggie salad
The key to this salad is to keep everything small, like 1/2 inch or smaller.
In a large bowl, put in
chopped tomatoes
Chopped cucumbers
Chopped radishes
Chopped pepper
Chopped red onion
Chopped dill
Chopped mint if you have it in the garden
Chopped parsley if you want
For the dressing, combine in a jar and shake to combine
1/4 cup white balsamic vinegar
2 cloves of garlic, peeled and coarsely chopped
1/2 tsp sugar
1/2 tsp oregano
1/4 tsp salt
1/4 tsp black pepper
1/2 cup olive oil
