Kani Salad
Two of my kids love kani (fake crab). They often add some to their ramen or mix up with Kewpie and serve over rice. Then we saw this kani salad and knew we had to try. Incoming vague measurements.
3/4 of a cucumber, sliced thinly and then into 1 inch pieces (I tried on a mandoline and didn't succeed the first time)
1/2 tsp - 1 tsp rice vinegar
6 sticks of kani, shredded and cut into 1 inch pieces
1-2 tbs kewpie mayo
sriracha, as much as you'd like
A dash of salt*
Pinch of sugar
White pepper to taste
Cut up your cucumber and salt it and place over a strainer (trying to pull out some of the liquid)
Rinse and dry
Combine everything and taste along the way
*if you salt the cucumbers, you might not need more salt, please taste before adding more
Notes-
I might still want to add some thinly cut or shredded carrot or sliced green onions to it too. The school agers didn't want to this time.
