Vegan "cheese" queso

 Aka Bitchin' Sauce.  I didn't come up with the name.  Don't blame me. 


Copy cat from a dip from the Joe who is a Trader

Adapted from Blissful Basil


1 cup cashews soaked in water for at least 2 hours

1/4 cup flavorless oil (grapeseed)

1/4 cup nutrional yeast

1/4 cup + 2 tbs lemon juice 

4 cloves of garlic, peeled and smashed

3/4 tsp - 1 tsp sea salt 

1 tbs Amino's, soy sauce, tamari

1/2 tsp garlic powder

1/2 tsp cumin 

dash of cayenne

2-3 tbs of water to the get to the right consistency 

Chipotles in adobo as desired (saw this addition in another place and I really like the flavor)

Blend everything together in a high powered blender, not the small one, adding water to get the right consistency, and until it's smooth 

You might have to scrape the sides and blend more for a few times 

It should be scoopable with a chip, like queso
