**Future me, do NOT use dried rice noodles. Use the fresh ones!!**
Slice your beef/ chicken/pork/tofu into small pieces and marinade in a bowl with a little
Corn starch
baking soda
neutral oil
soy sauce
white pepper
garlic powder
Chop up a bunch of garlic and your veggies into small pieces, perferably gai lan, chinese broccoli, stems separated from the leaves (we had to use the leafy parts of some bok choy)
For the sauce
2 tbs soy sauce
2 tbs dark soy
3 tsp fish sauce
2 tbs oyster sauce
1/4 cup vinegar (rice?)
white pepper
sugar
chicken bullion powder*
For the dish-
You will need your protein of choice
Gai lan
Garlic
Fresh flat rice noodles (the dried kind works but they broke when we mixed it up)
Egg, beaten
In your wok, add a little oil and then spread out the meat into one layer
When the meat starts to take on color on the top side, stir fry the meat until it's done
Remove to a plate
Add in your gai lan stems first and quickly saute
Add in your chopped garlic and stir around quickly
Add in your rehydrated flat rice noodles
Add in your sauce and stir to combine
If you want to add some cooked eggs to it, do it here, push everything to the side and scramble the eggs in the empty spot of your pan
Add the beef back in and quickly add the leaves just enough for them to wilt
Finish with a little seasme oil
*we had to more than double the sauce to almost a cup total. This was the right amount of sauce I think
