Spring roll salad with edamame hummus dressing

Lots and lots of parts. We usually have everything on hand though.
1 3/4 edamame beans
2 roasted or grilled jalapenos
1 shallot sliced
3 garlic, whole
1 tsp mushroom powder (smashed porcini or shiiatake)
1 tbs sugar
1/2 c rice vinegar
1/2 c water
4 tbs olive oil
2 tbs soy sauce
salt and pepper
4 tbs olive oil
2 tbs soy sauce
salt and pepper
Blend everything with a stick blender, add 1/4 cup more water if needed
For the salad-
Shredded romaine or iceberg lettuce
roasted cauliflower
Matchstick carrots
Matchstick cucumber
Cooked thin rice noodles (we cooked ours in hot water and then cut with scissors)
Pickled shallots or red onions
Chopped mint
Chopped cilantro
Sprouts, we had radish sprouts
Halved red grapes
We let kids assemble their salads and they didn't pick all the ingredients.
Some added salmon and steak we had leftover in the fridge.
They also didn't use the dressing we made and I only made half a bunch.
Two adults used almost all of a half batch of dressing.
Depending on how many people are eating, don't use a whole batch of dressing to an entire salad. Add as you need it.
*Gluten free AF as long as you use tamari
