Meat and veggie lo mein

There's probably a recipe in my wok cookbook but this caught my eye (from the clock app) because it didn't have complex directions or ingredients that we didn't have.  We've stocked our pantry and fridge with some basic sauces over time so we have a bunch of this stuff already.*

We are in the stage of hungry-kids-all-the-time era of life.  This feeds a lot with leftovers.  Use it as a guide and scale up or down as needed.  The most important thing to remember here is to have a good mix of noodles, protein, and vegetables.  The more colorful the mix, the better.  

And this is a rough estimate
Marinade- 
1 1/4 pound pork tenderloin, sliced thinly and into large bite sized pieces
5 garlic cloves, smashed and minced, save half for the stir fry
1 inch of peeled ginger, minced, save half for the stir fry
1 tbs oil
1 tbs oyster sauce
1 tbs soy sauce
1 tbs corn starch
1 tbs baking soda

1 3/4 packages of cooked wonton noodles, rinsed with cold water and spread out to prevent sticking

1/2 - 3/4 cup each chopped vegetables of your liking we did carrot, bell pepper, snow peas, 4 scallions into large pieces (this is a clean our your veggie drawer kinda thing, broccoli, mushrooms, water chestnuts)

Sauce-
2 tbs soy
2 tbs oyster sauce
2 1/2 tbs dark soy
1 1/2 tbs sesame oil 
1/4 c broth
1 tbs sugar
1 tsp white pepper

Heat up your wok with a little oil and add your protein of choice in a single layer
Cook 2-3 minutes and then flip and cook the other side (this should go quickly because your pieces are small)
Remove from heat 
Deglaze your pan with a little cooking wine and add the remaining garlic and ginger for a few seconds
Start with your harder veggies first and stir fry a minute or two
Add in the softer veggies and stir fry a little bit
Add your cooked noodles and the sauce
Toss to coat
Add in your protein
Top with more chopped scallions, hot sauce and sesame seeds if you'd like



* If you don't have a good stash of ingredients, go to the Asian market and get some light soy sauce, dark soy sauce, sesame oil, a hot sauce of your liking, mirin, oyster sauce, rice vinegar, Shaoxing cooking wine, and good rice.
