Brine

We brined our turkey last night, here's what we did.

Combine 1/2 c. table salt and 1/2 c. brown sugar for every gallon of water (we have a 15 pound turkey so we made a total of 3 gallons of brine).
I added random spices to the brine as well, star anise, black peppercorn, mustard seeds and allspice berries.
Heat to a simmer to dissolve the salt and sugar.
Remove from heat and cool.
We used our turkey bucket with a brining bag inside and added some ice to the brine.
Tonight we'll take it out of the brine and let it sit in the turkey bucket.
