The messiest and delicious chicken sandwich
We love a crispy chicken sandwich but haven't visited that popular store in years. Better to make it your own. I will admit I'm not very comfortable frying things. It's a mess, it makes the kitchen hot, etc. When in doubt, oven fry!

Chicken marinade-
2 lbs trimmed chicken thighs
1/2 c buttermilk
1 1/2 c pickle juice
1/2 tbs each salt, garlic powder, paprika, cumin, curry, chili powder
1 tsp black pepper
Combine everything and let sit at least an hour and up to one hour
Coating-
2 c flour
same spices as above
Combine everything in a pie or cake pan, whatever you use to dredge
Hot honey-
1/4 cup honey
1/2 cup BBQ
hot sauce if you want
splash of water to thin
Mix everything and taste for seasoning
Ranch dip-
1/2 c mayo
1/2 c sour cream
1/2 c buttermilk
2 tbs fresh dill chopped
2 tbs fresh chives, chopped
2 tbs scallions, chopped
1/4 tsp onion powder
1/2 tsp garlic powder
1/4 tsp salt
1/8 tsp black pepper
splash of lemon juice
Combine everything and taste for seasoning
Make a few drips of the buttermilk mixture into the flour (this makes little crispy bits on the chicken)
Dip the chicken into the flour mixture and the drege again into the buttermilk and flour
Place your chicken on a preheated foiled lined, and lightly oiled sheet pan
Bake at 425 for 10-12 minutes or until done
Midway through, add a little more oil to the top of the chicken and flip over
Bake until done (I'm guessing on the time)
Toast your buns and top the chicken with bbq sauce, ranch dressing, and a bunch of dill pickle chips
Grab a bunch of napkins, you're gonna need them
