Peas and Cheese Pasta
I love peas more than pizza. My second grade self made it known to her whole class.
3-4 ounces fresh spinach
1 1/2 c fresh or frozen peas
1 c Pecarino or Parmesan
Zest and juice of one lemon
2 small cloves of garlic
2 tbs butter
1 lbs pasta
Bring a medium and large pot with water, bring to a simmer and salt them well
In the medium pot cook the spinach and peas for a few minutes until the spinach is wilted
Shock in cold water if desired (I was lazy and didn't do this step)
Move the veggies to a blender
Add in the lemon juice, lemon juice, cheese, garlic, and a little pasta water
Blend until smooth
Drain the pasta when it's a little under done
To the pot, add the butter, blended sauce, pasta, and a little more pasta water
Cook over low heat adding pasta water as needed to finish the pasta
Season with more salt if needed
The original recipes called for a mix of ricotta, basil, lemon zest, salt, and pepper OR burrata. We all think this isn't necessary.
