Trying to catch the word in the search for when it's winter time and we can eat soup. This is not something you want in the middle of the summer.
Wonton soup, deconstructed From Eat Figs not Pigs. Less work, same taste.
for the meatballs
1 1/2 lbs ground turkey/pork
4 stalks green onion
2 tsp grated ginger
4 large cloves garlic minced
3 tbs soy sauce
1 tbs sesame oil
1 1/2 tsp white pepper
3 tbs cornstarch
For the broth
9 cups chicken or veggie broth
6 cloves garlic smashed
1 inch piece ginger sliced
1 large onion quartered
rinsed and smashed lemongrass stalk (trim the ends)
3 tbs soy sauce to taste*
1 1/2 tbs sesame oil to taste*
2 tbs rice vinegar to taste*
1 1/2 tsp white pepper*
pinch of salt
splash of fish sauce*
25 or more wonton wrapper cut into fours
bok choy rinsed and chopped
make the meatballs and roll into 1 inch balls, set aside
for the broth heat the sesame oil in a large pot over medium heat
cook the onion, garlic, ginger, lemon grass and cook for 3-4 mins
you might have to add more oil (olive or vegetable)
pour in the broth, soy, vinegar, sesame oil, white pepper, salt and fish sauce
bring to a boil and then reduce heat and simmer for 20 mins
strain the broth and put the broth back into the pot and bring to a simmer
drop the meatballs into the broth and cook until they float 10-15 mins
drop in the wonton wrapper in batches
about 3-5 minutes or until they float
add in the chopped bok choy and simmer another 2-3 minutes until the are wilted but not soft
taste for seasoning* and serve with more chopped green onions if desired
