Pastina and veggie soup for when you're sick

It's called  Italian penicillin online.  No Italian grandma's taught me this but man am I glad for it today.  I made the base and froze it several months ago for days like these.  All I had to do was defrost the base and cook some pasta.  Big ole cup of veggie broth since I can't taste anything.


4 cups chicken broth

6 cups of water

1 whole onion, peeled and quartered

4 carrots, sliced into sticks

4 ribs of celery, large dice

6-10 cloves of garlic

Parmesan cheese rind, if you've got it


Combine everything in a large pot and bring to a boil

Cover and simmer for 45 minutes

When it's done, blend up all the veggies  with a scoop or two of soup and add back into the pot


To serve

Cook some pastina, orzo, or fideo

Drain and then toss with 1 egg beaten with an amount of parmesan cheese

Add butter to the pasta and slowly add in your egg mixture


Add some noodles to the bottom of your bowl and top with soup

Adjust for seasoning ( I like a hit of acid so I added in some lemon juice) and more parmesan if you want to

Cold, begone!
