Artichoke pasta alfredo

 Hidden fiber from artichokes and protein from the sauce!  This was excellent.  Leftovers didn't last 12 hours in this house. 

Into a blender, add-

1 can of drained artichoke hearts

1 cup grated parmesan cheese

1 cup cottage cheese

as much nutritional yeast as you want 

1 cup half and half (or cream)

zest of one lemon

juice of one lemon

2-3 cloves of crushed garlic (or if you're in a hurry, garlic powder works too)

salt

pepper

A ladle full of pasta water

Blend until smooth

Cook 1 lbs slightly under-cooked pasta, we used celantani or cavatappi and save 1/2 cup of pasta water

Drain the pasta and add in back into the pot

Top with sauce and cook over low heat adding pasta water to make the sauce over all the pasta 

Add more cheese if you want

Season with salt and pepper
