Salmon and rice sushi bowls

 We've made a simpler salmon and rice bowl here before, we add green beans with soy and garlic, roasted broccoli or steamed edamame.  Turns out, our kids all love salmon.  The carnivore even orders it when on vacay with his grandparents.  


I saw another version with salmon as a protein and rice as a base but this one was more sushi roll based.  It was on that clock app and they did not link their recipe on another platform so I can't properly cite them.  

The ingredients

Salmon diced into 3/4-1 inch large cubes

Cajun or your fave blackening seasoning

Seasoned sushi rice (rice vinegar, sugar and salt)

shaved carrots

cucumber ribbons, sliced

sliced avocado

sliced nori strips or furikake

sesame seeds


Sauce-

kewpie or plain mayo

sriracha sauce

honey all to taste


Toss the salmon cubes with your seasoning

Cook up the salmon until it's done

Top your rice with all the ingredients and then top with sauce
