Cajun chicken orzo
This was a lunch for me a few weeks ago and it was amazing.
2 tsp smoked paprika
3/4 tsp garlic powder
3/4 tsp onion powder
1/4 tsp cayenne
1 tsp oregano
1 tsp thyme
1/2 tsp salt
1/2 tsp black pepper
olive oil
1 chicken breast, diced
1 tbs butter
1/2 onion, diced
1/2 red pepper, diced
3 cloves of garlic, minced
14 ounces Rotel
1 cup dry orzo
1 1/2 cups broth
2 ounces cream cheese
parsley for garnish
Mix the spices together in a small bowl
Toss half of the spices with the chicken breast and cook in a large pan with oil for a few minutes until the chicken is cooked through
Remove and set aside
Add the butter and cook the vegetables until tender
Add in the garlic and orzo and toast for a minute or two
Add the Rotel, other half of the spices and the broth and bring to a boil
Cook until the orzo is done, stirring often so the orzo doesn't stick over medium low heat, about 6-7 minutes, add more broth if needed ( and we did)
When the orzo is done, turn off heat and stir in the cream cheese, add the chicken back in, season with salt and pepper and top with parsley
