Creamy curry udon

We made this as an adults only dinner last month when the high schoolers were at a school musical performance.  The carnivore had something else because he doesn't like udon noodles.  It was excellent!


2 packages of udon noodles

1/2 small onion, sliced

as many mushrooms as you want, also sliced

2 cloves of garlic, minced

2 tbs butter

2 cubes of curry, chopped

1 cup heavy cream or evaporated milk 

sliced scallions for garnish

chili oil for garnish 

parmesan cheese for garnish


Cook the noodles and drain and set aside

Melt the butter in a large pan over medium low heat and cook the garlic, onions, and mushrooms until they are almost done

Add in the evaporated milk or cream and heat until simmering

Add the curry cubes and mix to dissolve, add in water if it's too thick

Add the noodles and toss to coat

Serve topped with scallion, chili oil, and parmesan cheese
