Stuffing!

 Before it got too hot, I wanted to make a fake Thanksgiving.  We make this stuffing and place it under our spatchcocked turkey or chicken.  Put in a large roasting pan and then top with a wire rack.  Put the bird on the wire rack.

2 1/2 lbs bread cut into 3/4 inch cubes

8 tbs butter

1 1/2 lbs bulk sausage

1 large onion, finely chopped

4 stalks celery, finely chopped

3 cloves garlic finely chopped

1 quart chicken stock

3 eggs

1/4 cup fresh chopped parsley


You need to stale or dry out your bread

Place on two rimmed baking sheets and bake at 275 for about 50 minutes total until the bread is dried

Rotate each sheet from high to low and front to bake for even baking

Melt the butter in a large pan and then add the sausage 

Cook over medium high heat until almost all pink is gone and then add in the onion and celery, cook until softened

Add in garlic and cook a minute more

Remove from heat and add half the chicken broth

In a different bowl, add remaining broth and whisk in the eggs and parsley

In a giant bowl, add the bread cubes then the sausage mixture and stir, you want to cool down this mixture before you add the eggs

Slowly add in them egg mixture and stir well

Bake at 350 for 45 minutes or until done (150 degrees on the inside) or put in a large crockpot on low for 4-5 hours


A 2023 edition

We left out the sausage all together and then made a bunch of bread to make up 2 1/2 pounds.  Corn bread, English muffin bread and then a white loaf 

Cooked in the crockpot because our roasting pan is enormous and I didn't want to burn it, low for 4 hours and it was done with time to spare.  Check the internal temperature and switch to warm if it's done.
