Onion dip

 Adapted from Barefoot Contessa 

2 large onions, halved, sliced into 1/8 inch half moons then sliced one more time in half

4 tbs butter

2 tbs vegetable oil *

1/4 tsp cayenne

1 tsp salt

1/2 tsp ground black pepper

4 ounces cream cheese, room temperature

1/2 cup sour cream 

1/2 cup mayo


In a large pan, add the butter and oil and melt over medium heat

Add the onions, cayenne, salt, and pepper and cook for 10 minutes

Reduce to medium low or low and cook until the onions are soft and caramelized about 20 minutes or more

Let cool

Beat the cream cheese. sour cream, and mayo until smooth

Add the onion mixture and mix again

Taste for seasonings ( we needed more cayenne and salt last time we made this)


Serve at room temp with potato chips
