Tex Mex Taco casserole

 From Nom Nom Paleo  Reminds me a lot of the Spanish rice already here on the blog but without the rice.  


1 lbs ground beef

1 small onion finely diced

1 red pepper finely diced

1 lbs riced cauliflower

3 garlic cloved minced

1 1/2 cup salsa

1 tsp dried oregano

1 tbs chili powder

salt and pepper to taste

4 eggs whisked

cherry tomatoes to top

cilantro if desired for garnish


Preheat oven to 350

Cook the ground beef in a large cast iron skillet until almost all the way cooked through 

Add the onion and pepper and cook until soft

Add in the cauliflower rice and the garlic and stir 

Add in the salsa, oregano, chili powder, salt, and pepper

Evenly pour the eggs over the mixture and top with tomatoes, cut side up and bake until eggs are set about 40-45 minutes

Top with cilantro if desired
