Corn bread

A Budget Bytes recipe.

We've made this twice now and it's perfect every time.  Make sure to add butter to the inside of your pie plate to ensure it doesn't stick.

1 c. cornmeal
1 c. AP flour
1/4 c sugar
4 tsp baking powder
1/2 tsp salt
1 c. milk
1 egg
1/4 c. vegetable oil
butter for the pan

Butter the inside and side of a 9 inch pie plate or cast iron pan.
In a medium blow, mix the cornmeal, flour, baking powder and salt.
In a small bowl combine the milk, egg  and oil.
Pour the wet ingredients into the dry ingredients and stir until combined.
Pour into your buttered dish and bake at 425 for about 20 minutes or until done.

  1. I'll have to try this. I am terrible at cornbread, especially at this altitude.
