Classic Brownies

1 1/4 cups (5 ounces) cake flour or 5 oz minus 2 tbs AP flour
1/2 teaspoon salt
3/4 teaspoon baking powder
6 ounces unsweetened chocolate, chopped fine
12 tablespoons (1 1/2 sticks) unsalted butter, cut into six 1-inch pieces
2 1/4 cups (15 3/4 ounces) sugar
4 large eggs
1 tablespoon vanilla extract

Mix the flour, salt and baking powder in a medium bowl and set aside.
Melt the chocolate and butter in a double boiler or in the microwave (1 minute then stir and additionally for 30 seconds until everything is melted).
Transfer to a large bowl or to the stand mixer.
Gradually whisk in sugar until combined.
Add eggs in one at a time and mix until combined.
Stir in the vanilla and then the flour mixture in thirds, mix well.
Pour into a lined or greased 13x9 inch pan at 325 for 30-35 minutes or until a toothpick into the center of the pan comes out clean.
