Banana bread
Here's the recipe you need when you have over ripe bananas to use up. Toddler review time-they beg for this banana bread as soon as it comes out of the oven.
Adapted from Simply Recipes. Don't use a mixer for this, it'll mash the bananas too much.
3 or 4 ripe bananas mashed with a fork, divided
1/3 c. melted butter
3/4 c. sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
Pinch of salt
1 1/2 c. all-purpose flour
Mash the bananas in a large bowl and reserve about 1 banana to fold in later.
Add in melted butter and stir to combine.
Mix in the sugar, egg, and vanilla.
Sprinkle the baking soda and salt over the mixture and mix in.
Add the flour and mix then fold in the remaining banana.
Pour mixture into a buttered 4x8 inch loaf pan.
Bake for 1 hour at 350°F.
Cool on a rack.
Remove from pan and slice to serve.
