Chicken meatballs
2 lbs ground chicken
2 eggs
1 small finely diced onion
2-3 cloves crushed garlic
1 1/2 c. water
1 1/4 c. breadcrumbs
1/2 c. fresh chopped parsley
1/2 c. grated parmesan cheese
1 tsp salt
1/2 tsp ground black pepper
Preheat oven to 450.
Mix everything in a large bowl. It will look way too wet but don't worry, it's supposed to be that way.
Shape meatballs into 1 inch diameter meatballs. If using your hands, spray with non stick spray to avoid sticking.
Place on a rimmed baking sheet and pour in 2 c. boiling water.
Roast meatballs for 10-25 mins depending on the size or until the meatballs are no longer pink.
These are nice and tender, perfect for little eaters. Our favorite thing to do is to toss with pesto sauce and tortellini.
