Hummus

 I've tried several recipes over the years but this one is it.  The one we are going to make each time.  I'm not a chemist but there's something about adding the baking soda that makes the difference.

From Bon Appetit 

1 cup dried chickpeas

2 tsp baking soda, divided

4 garlic cloves

1/3 cup lemon juice, more if needed

1 tsp kosher salt, more if needed

2/3 cup tahini

1/4 tsp ground cumin

olive oil for serving


Place the chickpeas and 1 tsp baking soda in a large bowl

Cover with cold water 2 inches above the beans

Let sit 8-12 hours 

Drain and rinse

Add the chickpeas and 1 tsp of baking soda and cover with water

Bring to a simmer in a medium pot 

Reduce heat to medium low and partially cover

Cook until the beans are tender and almost falling part about 45-60 minutes

Strain and set aside, pressing slightly to get the water out

Pulse the garlic, lemon juice, and 1 tsp salt until combined and then let sit for 10 minutes

Place the chickpeas and cumin into a blender

Add ice cubes, I don't know how many I started with.  Add 4-5 and then go from there.

Blend until smooth adding more ice cubes to thin *

Season to taste with more lemon juice, salt, and cumin if needed

If you are serving with pita, drizzle with olive oil


*the blending process was really hard.  It was really thick and it was hard to blend.  I kept adding ice cubes and it eventually with liquid enough to move around.  I blended it a bunch after that (2-3 minutes) just to make it really smooth.
